The illustration demonstrates the design and working mechanism of a home smokery.
Overall, primarily positioned below ground level, the smokery operates through a series of five stages, starting with the intake of fresh air, progressing through smoke generation, and culminating in the smoking of food.
The initial three stages are dedicated to smoke creation. Initially, air is funneled downward into an underground chamber by positioning a lid at an angle on the surface, which directs the airflow. This chamber connects to another compartment with a sealable lid, where logs are inserted and ignited, with the oxygen from the incoming air facilitating combustion. Once smoke is produced, the second lid is closed to trap the smoke emanating from the burning logs.
The final stages involve the food smoking process. The generated smoke ascends through a pipe that channels it into an enclosed smoking box above the ground. Inside this box, various food items including fish and meat are suspended and subsequently infused with smoke, which transforms them into smoked products.
